Instructions

  1. Preheat oven to 400°F (200°C). Line a standard 12-cup muffin tin with paper liners or grease with oil spray.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until uniform and free of lumps.
  3. In a separate smaller bowl or jug, whisk the milk and oil together until fully combined and smooth.
  4. Pour the wet mixture into the dry mixture. Stir gently with a spatula or wooden spoon until the flour just disappears; the batter should remain lumpy. Do not overmix.
  5. Gently fold in the frozen blueberries, distributing them evenly without over-stirring.
  6. Scoop the batter into the muffin cups, filling them almost to the top.
  7. Bake at 400°F (200°C) for 5 minutes. Without opening the door, reduce the heat to 350°F (175°C) and bake for another 15-18 minutes, or until a toothpick inserted into the center comes out clean.
