Ingredients

  • 1 cup (220g) packed brown sugar
  • 2 large eggs, room temperature

  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ cups (255g) semi-sweet chocolate chips
  • 12 full standard Oreo cookies
  • Extra chocolate chips (optional, for topping)

Instructions

  1. Freeze the 12 Oreo cookies on a baking sheet or plate for 15-30 minutes until rock hard.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar on medium-high speed for 3-4 minutes until light and fluffy.
  3. Reduce mixer speed to medium-low. Add eggs one at a time, mixing just until incorporated. Add vanilla extract and mix briefly. Scrape down the sides of the bowl.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture on low speed. Mix until just combined; do not overmix.
  6. Switch to a silicone spatula and gently fold in the chocolate chips until evenly distributed.
  7. Scoop about 1.5 tablespoons of dough, flatten into a disc, place one frozen Oreo in the center, and fold the dough over to seal completely. Roll into a ball.
  8. Place stuffed dough balls on parchment-lined baking sheets.
  9. Preheat oven to 350°F (175°C). Bake for 10-12 minutes until edges are set and lightly golden, but centers still look soft.
  10. Let cookies sit on the hot pan for 5 minutes to set, then transfer to a cooling rack to cool completely.
