- 1 cup (180g) instant or minute rice
- 3 stalks green onions, sliced

- 1 teaspoon sriracha
- 1 medium avocado, sliced
Instructions
- Rinse the rice if necessary and cook according to package instructions in a pot or rice cooker.
- Pat the salmon fillets dry with paper towels to ensure a good crust.
- Sprinkle blackened seasoning generously on all sides of the salmon, pressing gently to adhere.
- In a small bowl, whisk together mayonnaise and sriracha to make the sauce.
- Heat a cast iron skillet over medium-high heat and add butter, waiting until it foams and turns golden.
- Place salmon fillets in the skillet, skin-side down if applicable. Sear for 3-4 minutes without moving.
- Flip the fillets and cook for another 2-3 minutes until opaque and flaky.
- Remove salmon from heat and let rest for 2 minutes.
- Fluff the cooked rice and divide evenly among four bowls.
- Place a salmon fillet on top of each rice mound.
- Arrange sliced avocado on the side and drizzle sriracha mayo over the salmon.
- Sprinkle with sliced green onions and serve immediately.
