  • 4 bone-in pork chops (about 1 inch thick / 600g)
  • 1/2 cup unsalted butter (113g / 1 stick)
  • 2 large Honeycrisp apples (peeled, cored, sliced / 400g)
  • 810 fresh sage leaves (about 2 tbsp chopped / 4g)
  • 2 tbsp all-purpose flour (15g)
  • 1 tsp kosher salt (6g)
  • 1/2 tsp black pepper (1g)
  • 1/4 cup apple cider (60ml)

Instructions

  1. Peel, core, and slice apples into 1/4-inch thick wedges. Set aside.
  2. Pat pork chops dry with paper towels. Season both sides with salt and pepper, then dust lightly with flour, shaking off excess.
  3. Heat a large skillet over medium heat. Add butter and watch closely until it melts, foams, and turns golden brown with a nutty aroma (3-4 minutes).
  4. Add sage leaves to the brown butter and cook for 30 seconds until crisp. Remove sage with a slotted spoon and set aside.
  5. Add pork chops to the pan. Sear for 4-5 minutes on the first side until golden, then flip and cook for another 3-4 minutes until internal temperature reaches 145°F (63°C). Remove chops to a plate and tent with foil.
  6. Reduce heat to medium-low. Add sliced apples to the same pan and cook for 6-8 minutes, stirring occasionally, until soft and caramelized.
  7. Pour in apple cider and scrape up brown bits from the bottom of the pan. Simmer for 1-2 minutes until slightly thickened.
  8. Return pork chops and any accumulated juices to the pan. Spoon apples and sauce over chops. Garnish with crispy sage leaves and serve warm.

Notes

Pat pork chops dry before seasoning to ensure a good sear. Watch brown butter closely as it can burn quickly. Rest meat for 5 minutes after cooking to retain juices. If apples are still hard, add a splash of water and cover for 2 minutes. For a thicker sauce, mix 1 tsp cornstarch with 1 tbsp cold water and stir into the simmering cider.
