- 1 lb ground turkey (93% lean)
- 2 medium sweet potatoes (approx. 1.5 lbs), peeled and diced into 1/2-inch cubes
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 1 cup marinara sauce (no added sugar)
- 1/2 cup low-sodium chicken broth
- 1 tbsp olive oil
- 1 tbsp Italian seasoning
- 1/2 tsp red pepper flakes
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Peel and dice the sweet potatoes into 1/2-inch cubes. Dice the onion and mince the garlic.
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and break it up with a wooden spoon.
- Cook the turkey for 5-6 minutes until browned and no longer pink. Drain excess fat.
- Add diced onion to the skillet with the turkey. Cook for 2-3 minutes until translucent.
- Add garlic and red pepper flakes. Cook for 1 minute, stirring constantly, until fragrant.
- Add diced sweet potatoes, Italian seasoning, salt, and pepper. Toss to coat.
- Pour in marinara sauce and chicken broth. Stir to combine.
- Bring to a simmer, then reduce heat to medium-low. Cover and cook for 8-10 minutes until sweet potatoes are tender.
- Remove lid, taste, and adjust seasoning. Stir in fresh parsley and serve immediately.
Notes
Drain excess fat from the turkey to prevent a greasy dish. Cut sweet potatoes uniformly for even cooking. Use low-sodium broth to control saltiness. This recipe freezes well for up to 3 months.
