  • 1 lb ground turkey (93% lean)
  • 2 medium sweet potatoes (approx. 1.5 lbs), peeled and diced into 1/2-inch cubes
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup marinara sauce (no added sugar)
  • 1/2 cup low-sodium chicken broth
  • 1 tbsp olive oil
  • 1 tbsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Peel and dice the sweet potatoes into 1/2-inch cubes. Dice the onion and mince the garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and break it up with a wooden spoon.
  3. Cook the turkey for 5-6 minutes until browned and no longer pink. Drain excess fat.
  4. Add diced onion to the skillet with the turkey. Cook for 2-3 minutes until translucent.
  5. Add garlic and red pepper flakes. Cook for 1 minute, stirring constantly, until fragrant.
  6. Add diced sweet potatoes, Italian seasoning, salt, and pepper. Toss to coat.
  7. Pour in marinara sauce and chicken broth. Stir to combine.
  8. Bring to a simmer, then reduce heat to medium-low. Cover and cook for 8-10 minutes until sweet potatoes are tender.
  9. Remove lid, taste, and adjust seasoning. Stir in fresh parsley and serve immediately.

Notes

Drain excess fat from the turkey to prevent a greasy dish. Cut sweet potatoes uniformly for even cooking. Use low-sodium broth to control saltiness. This recipe freezes well for up to 3 months.
