Instructions
- Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar on medium speed until light, fluffy, and pale (about 3 minutes).
- Add eggs one at a time, beating well after each addition, then mix in the vanilla extract until just combined.
- In a separate medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the flour just disappears. Do not overmix.
- Switch to a spatula or wooden spoon and fold in the rolled oats and raisins (and nuts if using) until evenly distributed.
- Scoop dough onto prepared baking sheets, spacing them about 2 inches apart. Do not flatten the dough.
- Bake for 12-14 minutes until edges are golden brown but centers still look slightly soft.
- Let cookies sit on the baking sheet for 5 minutes to set, then transfer to a cooling rack to cool completely.
Notes
For best results, use room temperature butter and old-fashioned rolled oats. Do not overbake; cookies will continue to cook on the hot pan. For extra chewiness, chill the dough for 30-60 minutes before baking. Store in an airtight container with a slice of bread to maintain moisture.
