A quick, 5-minute cold salad featuring crisp cucumbers, juicy tomatoes, and tangy feta cheese bound together by a rich, creamy Greek yogurt dressing. Perfect as a light side dish for summer BBQs or potlucks.


Ingredients

  • 2 medium English cucumbers (about 600g), sliced into half-moons or cubes
  • 3 medium ripe tomatoes (about 400g), diced
  • 1 cup crumbled feta cheese (about 150g)
  • 1 small red onion (about 50g), thinly sliced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 cup full-fat plain Greek yogurt (120g)
  • 2 tablespoons sour cream (30g)
  • 2 tablespoons fresh lemon juice (30ml)
  • 1 clove garlic, minced
  • 1 tablespoon extra virgin olive oil (15ml)
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Wash and slice the cucumbers into half-moons or cubes. Dice the tomatoes into similar-sized chunks. Thinly slice the red onion.
  2. If the red onion is strong, soak the slices in ice water for 5-10 minutes to mellow the flavor, then drain.
  3. In a small bowl, whisk together the Greek yogurt, sour cream, lemon juice, minced garlic, olive oil, Dijon mustard, salt, and pepper until smooth.
  4. In a large mixing bowl, combine the cucumbers, tomatoes, and red onion.
  5. Pour the dressing over the vegetables. Sprinkle the crumbled feta and chopped herbs (dill and parsley) on top.
  6. Gently toss everything together until the veggies are evenly coated, being careful not to crush the tomatoes.
  7. Serve immediately or refrigerate for 15-30 minutes to allow flavors to meld.

Notes

For best results, use full-fat Greek yogurt for a thicker dressing. If using regular cucumbers, peel and scoop out the seeds to prevent sogginess. Drain juicy tomatoes if necessary. The salad keeps well in the fridge for 2-3 days.
