A quick, 5-minute cold salad featuring crisp cucumbers, juicy tomatoes, and tangy feta cheese bound together by a rich, creamy Greek yogurt dressing. Perfect as a light side dish for summer BBQs or potlucks.

- 2 medium English cucumbers (about 600g), sliced into half-moons or cubes
- 3 medium ripe tomatoes (about 400g), diced
- 1 cup crumbled feta cheese (about 150g)
- 1 small red onion (about 50g), thinly sliced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 1/2 cup full-fat plain Greek yogurt (120g)
- 2 tablespoons sour cream (30g)
- 2 tablespoons fresh lemon juice (30ml)
- 1 clove garlic, minced
- 1 tablespoon extra virgin olive oil (15ml)
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Wash and slice the cucumbers into half-moons or cubes. Dice the tomatoes into similar-sized chunks. Thinly slice the red onion.
- If the red onion is strong, soak the slices in ice water for 5-10 minutes to mellow the flavor, then drain.
- In a small bowl, whisk together the Greek yogurt, sour cream, lemon juice, minced garlic, olive oil, Dijon mustard, salt, and pepper until smooth.
- In a large mixing bowl, combine the cucumbers, tomatoes, and red onion.
- Pour the dressing over the vegetables. Sprinkle the crumbled feta and chopped herbs (dill and parsley) on top.
- Gently toss everything together until the veggies are evenly coated, being careful not to crush the tomatoes.
- Serve immediately or refrigerate for 15-30 minutes to allow flavors to meld.
Notes
For best results, use full-fat Greek yogurt for a thicker dressing. If using regular cucumbers, peel and scoop out the seeds to prevent sogginess. Drain juicy tomatoes if necessary. The salad keeps well in the fridge for 2-3 days.
