Description
A quick, restaurant-quality creamy garlic butter shrimp scampi that is naturally gluten-free and ready in just 15 minutes. Perfect for busy weeknights, this dish uses pantry staples to create a rich, velvety sauce.
Ingredients
- 1 lb (450g) Jumbo or Extra Large Shrimp, peeled and deveined
- 4 tbsp Unsalted Butter, divided
- 1/2 cup (120ml) Heavy Cream
- 6 cloves Garlic, minced
- 2 tbsp (30ml) Fresh Lemon Juice
- 1/2 tsp Red Pepper Flakes
- 8 oz (225g) Gluten-Free Pasta (brown rice or chickpea)
- 2 tbsp Fresh Parsley, chopped
- Salt and Pepper to taste
- 1 tsp Cold Butter (optional, for finishing)
Instructions
- Thaw frozen shrimp under cold water if necessary, then pat completely dry with paper towels. Season with salt and pepper.
- Bring a large pot of salted water to a boil. Cook gluten-free pasta according to package directions, checking 1 minute early to prevent mushiness. Drain, reserving 1/2 cup of starchy pasta water.
- Heat a large skillet over medium-high heat. Add 2 tbsp of butter. Once foaming, add shrimp in a single layer. Cook for 1-2 minutes per side until pink and opaque. Remove shrimp to a plate.
- Reduce heat to medium. Add remaining 2 tbsp of butter to the pan. Once melted, add minced garlic and red pepper flakes. Stir constantly for 30 seconds until fragrant but not browned.
- Pour in heavy cream and lemon juice. Simmer gently for 1 minute until slightly thickened.
- Add cooked pasta and shrimp back into the pan. Toss to combine. Add reserved pasta water as needed to reach desired consistency.
- For a glossy finish, whisk in 1 tsp of cold butter at the very end. Garnish with fresh parsley and serve with lemon wedges.
Notes
Do not overcook the shrimp or they will become rubbery. Save the starchy pasta water to help emulsify the sauce. If the sauce is too thin, simmer longer; if too thick, add more pasta water. This recipe is naturally gluten-free if using GF pasta. For a dairy-free version, substitute butter with olive oil and heavy cream with coconut cream.
