Description
A quick, one-pan weeknight meal featuring seared chicken breasts in a rich parmesan cream sauce with sun-dried tomatoes and spinach. Ready in 30 minutes with minimal effort.

- 1.5 lbs (680g) boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 1 cup (240ml) heavy cream
- ½ cup (120ml) low-sodium chicken broth
- ½ cup (70g) sun-dried tomatoes, drained and chopped
- 3 cups (85g) fresh baby spinach
- ½ cup (50g) freshly grated Parmesan cheese
- 2 tbsp olive oil
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Pat chicken breasts dry and season generously with salt and pepper. Pound to ½ inch thickness if needed.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden and internal temperature reaches 165°F. Remove chicken and set aside.
- Reduce heat to medium. Add butter to the pan. Once melted, add minced garlic and sauté for 1 minute until fragrant. Add sun-dried tomatoes and cook for 30 seconds.
- Pour in chicken broth and scrape up brown bits from the bottom of the pan. Simmer for 2 minutes to reduce slightly.
- Add heavy cream and stir to combine. Simmer gently for 3-4 minutes until sauce begins to thicken.
- Stir in fresh spinach and cook until wilted (1-2 minutes). Add Parmesan cheese and stir until melted and smooth. Taste and adjust seasoning.
- Return chicken to the pan, nestling it into the sauce. Spoon sauce over chicken and let warm through for 1-2 minutes before serving.
Notes
Do not overcrowd the pan when searing chicken to ensure proper browning. Use fresh garlic for best flavor. Drain sun-dried tomatoes well to prevent a soupy sauce. Keep the sauce on a gentle simmer to prevent the cream from separating. This dish does not freeze well due to the dairy content.
