Description

A quick, high-protein weeknight meal featuring golden, crispy shrimp tossed in a sweet and spicy bang bang sauce, cooked in an air fryer for minimal cleanup.


Ingredients

  • 1 lb (450g) large or extra-large shrimp, peeled and deveined
  • 1/4 cup (30g) cornstarch
  • 1/2 cup (120g) mayonnaise
  • 1/4 cup (60ml) Frank’s RedHot sauce
  • 3 tablespoons (45ml) honey
  • 2 cloves garlic, minced
  • 1 tsp fresh grated ginger
  • 1 teaspoon soy sauce
  • Avocado or olive oil cooking spray

Instructions

  1. Thaw frozen shrimp under cold water for 5-7 minutes, then pat them completely dry with paper towels.
  2. Place dried shrimp in a bowl and sprinkle with cornstarch. Toss gently with tongs until lightly coated, shaking off any excess powder.
  3. Preheat air fryer to 400°F (200°C). Lightly spray the basket with oil.
  4. Arrange shrimp in a single layer in the basket, ensuring they do not overlap. Spray the tops of the shrimp lightly with oil.
  5. Air fry for 4 minutes, then flip the shrimp and spray the other side with oil. Cook for another 4-6 minutes until opaque, pink, and curled into a ‘C’ shape.
  6. While shrimp cook, whisk together mayonnaise, hot sauce, honey, minced garlic, grated ginger, and soy sauce in a small bowl until smooth.
  7. Transfer hot, crispy shrimp to a large mixing bowl. Pour sauce over shrimp and toss gently to coat. Serve immediately.

Notes

Do not overcrowd the air fryer basket; cook in batches if necessary to ensure crispiness. Do not add sauce before air frying as the sugar will burn. Reheat leftovers in the air fryer at 350°F for 2-3 minutes to restore crunch; avoid microwaving.
