Description
Juicy, bone-in chicken thighs coated in a savory garlic and parmesan crust, baked at high heat for maximum crispiness. A simple, one-pan weeknight dinner that is keto-friendly and delicious.
Ingredients
Scale
- 2 lbs (900g) bone-in, skin-on chicken thighs
- 2 tablespoons avocado oil or olive oil
- 4 cloves garlic, minced
- 1/2 cup (50g) freshly grated parmesan cheese
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
- 2 tablespoons all-purpose flour
- 1/2 teaspoon paprika
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
- Pat chicken thighs completely dry with paper towels to ensure crispy skin.
- In a small bowl, mix flour, grated parmesan, minced garlic, Italian seasoning, paprika, salt, pepper, and red pepper flakes.
- Place chicken in a large bowl, drizzle with oil, and toss to coat.
- Sprinkle the flour-parmesan mixture over the chicken, pressing it onto both the skin and meat sides to adhere.
- Arrange chicken on the baking sheet skin-side up, ensuring pieces are not touching.
- Bake for 20 minutes, then flip the chicken.
- Bake for another 5-10 minutes until internal temperature reaches 165°F-175°F and skin is golden brown and crispy.
- Optional: Broil for 1-2 minutes for darker crust, watching closely to prevent burning.
- Remove from oven and let rest for 5 minutes before serving.
Notes
Ensure chicken is patted dry thoroughly to prevent steaming. Do not crowd the pan to allow air circulation. For gluten-free, use almond flour or GF flour. For dairy-free, substitute parmesan with nutritional yeast. Resting the chicken for 5 minutes helps redistribute juices.
