A creamy, crunchy, and spicy buffalo chicken dip made with pantry staples like cream cheese, rotisserie chicken, and Ritz crackers. This budget-friendly appetizer is ready in under 30 minutes and perfect for game day or feeding a crowd.
Ingredients
- 16 oz (450g) full-fat block cream cheese, softened
- 2 cups (200g) shredded cooked chicken (rotisserie or leftover)
- 1/2 cup (120ml) hot sauce (e.g., Frank’s RedHot)
- 1 cup (115g) shredded sharp cheddar cheese
- 1/2 cup (120ml) blue cheese dressing
- 1 sleeve (57g) Ritz crackers, crushed
- 2 tbsp (30g) butter, melted
Instructions
- Preheat oven to 350°F (175°C).
- Shred the chicken if not already done. Crush the Ritz crackers into fine crumbs and melt the butter.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the hot sauce, blue cheese dressing, and shredded cheddar cheese to the cream cheese. Mix on low speed until just combined.
- Fold in the shredded chicken gently with a spatula until every piece is coated.
- Transfer the mixture to a 9×9 inch baking dish and spread evenly.
- Mix the crushed Ritz crackers with the melted butter and sprinkle evenly over the top of the dip. Press down gently.
- Bake for 15-20 minutes, or until the edges are bubbly and the topping is golden brown.
- Remove from oven and let cool for 5 minutes before serving.
Notes
For best results, use full-fat block cream cheese rather than spreadable tub cream cheese to avoid a runny dip. If the topping browns too quickly, cover loosely with foil. The dip can be frozen unbaked for up to 2 months; add the cracker topping fresh before baking.
