  • 2 cups chicken broth (low-sodium)
  • 8 oz full-fat block cream cheese (softened)
  • 1 large yellow onion (roughly chopped)
  • 4 cloves garlic (minced)
  • 1 jar (16 oz) salsa verde
  • 1 bunch cilantro (chopped, stems and leaves)
  • 1 medium jalapeño (seeded and diced)
  • 2 cans (15 oz each) white beans (cannellini or Great Northern, rinsed and drained)
  • 1 can (15 oz) white corn (drained) or 1 cup frozen corn
  • 1 teaspoon ground cumin
  • 1 packet (1 oz) taco seasoning (mild)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (optional, for thickening)

Instructions

  1. Prep the chicken: If using rotisserie chicken, shred the meat into bite-sized pieces. If using raw chicken, chop into 1-inch cubes.
  2. Dump everything in: Add chicken, onion, garlic, salsa verde, chicken broth, cream cheese, beans, corn, cumin, taco seasoning, and jalapeño to the slow cooker. Stir gently.
  3. Cook on Low: Cover and cook on LOW for 6-8 hours. Alternatively, cook on HIGH for 3-4 hours if in a rush.
  4. Shred and Thicken: If using raw chicken, shred it in the pot with two forks. If desired, stir in the cornstarch slurry and cook on HIGH for 15-20 minutes to thicken.
  5. Finish and Serve: Stir in lime juice and half of the cilantro. Taste and add salt if needed. Serve hot with toppings.

Notes

Use full-fat block cream cheese for best texture; avoid spreadable tubs. Rinse canned beans well to reduce sodium. Add lime juice at the end to preserve brightness. Can be frozen for up to 3 months, though cream cheese may separate slightly upon thawing.
