Ingredients

  • 2 large English cucumbers (about 600g), sliced into half-moons
  • 1 medium fresh pineapple (about 500g), diced into ½ inch cubes
  • 1 small red onion (about 80g), thinly sliced
  • 3 tablespoons fresh lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 12 serrano or jalapeño peppers, minced
  • ½ cup fresh cilantro, chopped
  • 1 tablespoon roasted sesame seeds, for garnish

Instructions

  1. Wash cucumbers. If using standard cucumbers, peel and scoop out seeds. Slice English cucumbers into half-moons and place in a large mixing bowl.
  2. Slice red onion into thin half-moons. If desired, soak in cold water for 5 minutes to mellow flavor, then drain and add to the bowl with cucumbers.
  3. Dice fresh pineapple into bite-sized cubes. Place in a colander to drain excess juice for 5 minutes, then add to the bowl.
  4. In a small bowl or jar, whisk together lime juice, apple cider vinegar, soy sauce, honey, and sesame oil until emulsified.
  5. Add minced chili pepper and chopped cilantro to the main bowl.
  6. Pour the dressing over the vegetable and fruit mixture. Toss gently but thoroughly to coat everything.
  7. Cover and refrigerate for at least 10 minutes to allow flavors to meld.
  8. Give a final toss before serving. Garnish with roasted sesame seeds and serve cold.
