- 1 package (14 oz / 397 g) pre-made flatbread dough
- 1 cup fresh figs, sliced (150 g)
- 4 oz (113 g) fresh goat cheese (chèvre)
- 3 tbsp honey
- 1 tbsp fresh thyme leaves
- 1 tbsp extra virgin olive oil
- 1 tsp sea salt flakes
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Stretch the flatbread dough on the parchment paper into a thin, even layer, leaving a half-inch border for the crust.
- Brush the crust border with olive oil and sprinkle with a tiny pinch of salt.
- Crumble goat cheese evenly over the dough, leaving the crust bare.
- Arrange sliced figs flat on top of the cheese; avoid overcrowding.
- Bake for 12-15 minutes until the crust is golden brown and cheese is bubbling.
- Remove from oven and immediately drizzle with honey.
- Sprinkle with fresh thyme leaves and sea salt flakes.
- Let rest for 5 minutes before slicing to allow cheese to set.
Notes
Use room temperature dough for easier stretching. If using dried figs, soak them in warm water for 10 minutes first. Do not microwave leftovers as it makes the crust soggy; reheat in an oven at 350°F. This recipe does not freeze well.
