  • 1 teaspoon dried parsley

Instructions

  1. Thaw frozen shrimp in cold water if necessary, then drain and pat completely dry with paper towels. Season generously with salt and black pepper.
  2. Heat a 12-inch skillet over medium-high heat. Add olive oil and butter, swirling to combine. Wait until the butter foams and subsides slightly.
  3. Add shrimp in a single layer, ensuring not to crowd the pan. Sear for 1-2 minutes on the first side until pink and slightly browned. Flip and cook for another 1-2 minutes until opaque and curled into a ‘C’ shape. Remove shrimp to a plate, leaving juices in the pan.
  4. Reduce heat to medium. Add minced garlic and red pepper flakes to the pan. Sauté for 30-60 seconds until fragrant, being careful not to burn the garlic.
  5. Pour in chicken broth and lemon juice, scraping up any brown bits from the bottom of the pan. Simmer for 1 minute until the liquid reduces slightly.
  6. Return the shrimp and any accumulated juices to the skillet. Toss gently in the sauce for 30 seconds to heat through. Sprinkle with dried parsley.
  7. Taste and adjust salt if needed. Remove from heat immediately and serve.

Notes

Patting the shrimp dry is crucial for searing; wet shrimp will steam. Do not overcrowd the pan, or cook in batches, to ensure proper browning. Shrimp are done when they curl into a ‘C’ shape; a tight ‘O’ indicates overcooking. For a creamy version, add 1/2 cup heavy cream after deglazing. Serve with crusty bread, rice, or zucchini noodles.
