  • 2 tablespoons honey

  • 3 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon lemon juice (freshly squeezed)
  • Salt and black pepper for seasoning

Instructions

  1. Pat the salmon fillet completely dry with paper towels and season both sides lightly with salt and black pepper.
  2. In a small bowl, whisk together the honey, soy sauce, minced garlic, red pepper flakes, and lemon juice until combined.
  3. Heat an 8-inch non-stick skillet over medium-high heat and add the butter. Wait until it foams and stops bubbling.
  4. Place the salmon in the pan, skin-side down if using skin-on. Press gently for 10 seconds to prevent curling. Cook undisturbed for 4-5 minutes until the bottom is golden brown and opaque about 2/3 up the side.
  5. Flip the salmon carefully. Pour the glaze mixture over the top of the fish.
  6. Reduce heat to medium-low. Simmer for 4-5 minutes, spooning the bubbling glaze over the fish occasionally, until the salmon is cooked through and flakes easily with a fork.
  7. Remove salmon from the pan to a plate and let rest for one minute. Pour remaining glaze over the top and serve immediately.

Notes

Do not overcook the salmon; aim for an internal temperature of 125°F (52°C) for medium-rare or 135°F (57°C) for medium. Honey burns easily, so keep heat at medium-low once the glaze is added. Patting the fish dry is crucial for a good sear. This recipe does not store well; salmon is best eaten fresh. If leftovers occur, store separately and reheat gently at 50% power.
