Easy Peach Cobbler Recipe: Perfect Golden Biscuit Topping

  • Author: claire
  • Total Time: 70-75 minutes
  • Yield: 12 servings 1x

Description

A forgiving and delicious summer dessert featuring juicy, cinnamon-spiced peaches topped with a golden, buttery biscuit crust. This recipe requires no pie crust anxiety and minimal cleanup.

Ingredients

Scale
  • 67 medium fresh peaches (about 4 pounds), sliced into ½-inch wedges
  • ½ cup granulated sugar (for filling)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup granulated sugar (for topping)
  • ½ cup cold unsalted butter, cubed
  • ½ cup heavy cream, cold
  • 2 tablespoons butter, melted (for drizzle)
  • Coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish with butter or cooking spray.
  2. Wash and slice peaches into wedges. Place in a large mixing bowl.
  3. Add ½ cup sugar, cinnamon, nutmeg, lemon juice, and cornstarch to the peaches. Toss gently to coat evenly.
  4. Let the peach mixture sit for 10 minutes to release juices, then pour into the prepared baking dish and spread evenly.
  5. In a separate bowl, whisk together flour, baking powder, salt, and ¼ cup sugar.
  6. Cut in the cold, cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs with pea-sized butter pieces.
  7. Gradually stir in the heavy cream until the dough just comes together. Do not overmix.
  8. Drop dollops of biscuit dough evenly over the peach filling, leaving some gaps.
  9. Melt the 2 tablespoons of butter and drizzle it evenly over the biscuit dollops. Sprinkle with coarse sugar if desired.
  10. Bake for 45-50 minutes until the topping is deep golden brown and the filling is bubbling vigorously.
  11. Cool for at least 15-20 minutes before serving to allow the filling to thicken.

Notes

Keep butter cold for flaky biscuits. Do not overmix the dough. Let the cobbler cool for at least 15 minutes to prevent runny filling. Adjust sugar based on peach sweetness. Frozen peaches can be used if thawed and drained. For extra crispiness, broil for the last 2-3 minutes.
