An easy, no-cook appetizer featuring creamy cinnamon honey whipped ricotta paired with cured meats, aged cheeses, seasonal fruits, and nuts. Perfect for impressing guests with minimal effort.

- 16 oz whole milk ricotta cheese
- 4 tbsp heavy cream
- 3 tbsp mild honey (e.g., clover or orange blossom)
- 1 tsp ground cinnamon
- 8 oz salted cured meats (prosciutto, salami, or chorizo)
- 8 oz aged cheddar or smoked gouda cheese
- 1 box crackers (approx. 12 oz, variety of water and seeded crackers)
- 1 cup seasonal fruits (grapes, apple slices, figs)
- 1/2 cup toasted nuts (pecans or walnuts)
Instructions
- Whip the ricotta: In a medium bowl, combine 16 oz ricotta, 4 tbsp heavy cream, 3 tbsp honey, and 1 tsp cinnamon. Beat with an electric mixer on medium-high speed for 2-3 minutes until light and fluffy. Taste and adjust if necessary.
- Prep ingredients: Slice meats into strips or fold into rosettes. Cut cheeses into cubes or slices. Slice apples and figs. Toast nuts in a dry pan for 2-3 minutes until fragrant.
- Place anchors: Place the bowl of whipped ricotta in the center of a large board. Arrange cheeses around the board, leaving space between them.
- Add meats and fruits: Arrange meats in folds or rolls. Scatter apple slices, figs, and grapes around the board, filling gaps without overcrowding.
- Finish with crunch: Scatter toasted nuts around the board. Add crackers in a fan shape or stacked. Drizzle extra honey over the ricotta and sprinkle with a pinch of cinnamon for garnish.
Notes
For best flavor, let cheeses and meats come to room temperature 30-60 minutes before serving. The whipped ricotta can be made up to 24 hours in advance. Do not leave perishable items out for more than 2 hours.
