Description

These easy 10-minute grilled shrimp skewers are basted in a rich garlic butter sauce for maximum flavor. Perfect for weeknight dinners or summer gatherings, they are quick, impressive, and restaurant-quality.


Ingredients

  • 2 pounds (900g) Jumbo or Extra-Large Shrimp (1620 count), peeled, deveined, tails on or off
  • 2 tablespoons Neutral Oil (avocado or grapeseed)
  • 1/2 cup (115g) Unsalted Butter
  • 68 cloves Garlic, minced
  • 2 tablespoons Fresh Lemon Juice
  • 2 tablespoons Fresh Parsley, chopped
  • 1/2 teaspoon Red Pepper Flakes
  • Salt and Black Pepper to taste
  • 810 Wooden Skewers (soaked in water for 30 minutes) or Metal Skewers
  • Optional: Cherry tomatoes, bell peppers, or zucchini rounds for skewering

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using wood. Wipe metal skewers clean.
  2. Rinse shrimp under cold water and pat them very dry with paper towels to ensure a good sear.
  3. In a large bowl, toss the dried shrimp with neutral oil, salt, and black pepper.
  4. Thread 4-5 shrimp onto each skewer, leaving space between them. Alternate with optional veggies if desired.
  5. In a small saucepan over low heat, melt the butter. Stir in minced garlic, lemon juice, red pepper flakes, and half of the parsley. Keep warm but do not let the garlic brown.
  6. Preheat grill to high heat (400-450°F / 200-230°C) and oil the grates well.
  7. Place skewers on the grill and cook for 2-3 minutes per side.
  8. Baste the shrimp generously with the garlic butter mixture every time you flip them.
  9. Remove from grill when shrimp are opaque, pink, and curled into a loose ‘C’ shape (total cook time 4-6 minutes).
  10. Serve immediately, drizzling with remaining garlic butter and sprinkling with remaining parsley.

Notes

Pat shrimp dry thoroughly to prevent steaming. Do not overcrowd the grill to maintain high heat. Watch the shape of the shrimp; a tight ‘O’ indicates overcooking. For dairy-free, swap butter for olive oil or vegan butter. Do not marinate in acid for more than 30 minutes.
