Greek Yogurt Breakfast Bowls: 5 Easy High Protein Meal Prep

  • Author: claire
  • Total Time: 15 minutes
  • Yield: 5 servings 1x

Description

A high-protein, customizable meal prep breakfast strategy using thick Greek yogurt, fresh fruit, nuts, seeds, and granola. These bowls are designed to keep you full until lunch, require minimal morning effort, and can be prepped in advance for up to five days.

Ingredients

Scale
  • 2 cups (450g) plain Greek yogurt (non-fat or 2%)
  • 1 scoop (30g) unflavored or vanilla protein powder (whey or plant-based)
  • 1 cup (100g) low-sugar granola
  • 2 tablespoons (30g) chia seeds
  • 1/2 cup (60g) mixed nuts and seeds (almonds, walnuts, pumpkin seeds, hemp hearts)
  • 1 cup (150g) berries (strawberries, blueberries, raspberries, or blackberries)
  • 1 medium banana, sliced
  • 12 teaspoons maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Splash of milk (dairy or non-dairy) if needed for consistency

Instructions

  1. Wash and chop fruit. Pat berries dry to remove moisture. Slice banana into rounds. If using frozen berries, thaw slightly and drain excess liquid.
  2. In a medium bowl, combine Greek yogurt, protein powder, vanilla extract, and cinnamon. Whisk until smooth and creamy. Add a splash of milk if the mixture is too thick.
  3. Start layering jars: add a layer of chia seeds to the bottom of each jar.
  4. Add a layer of the yogurt mixture, followed by a layer of fruit. Repeat layers (yogurt, fruit, yogurt), leaving about an inch of space at the top.
  5. Top each jar with granola, nuts, and seeds. Drizzle with maple syrup or honey if using, and sprinkle with a pinch of cinnamon.
  6. Seal jars tightly and store in the refrigerator for up to 5 days. Stir or shake before eating.

Notes

Layering is crucial: keep granola on top to prevent sogginess. Use thick Greek yogurt; if it is runny, strain it through a cheesecloth. Do not freeze these bowls as the yogurt will separate and become grainy. For vegan version, use coconut or soy yogurt and plant-based protein powder.
