- 2 large russet potatoes (about 1.5 pounds), diced into ½-inch cubes
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- ½ cup beef broth (low-sodium)
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon dried thyme
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons fresh parsley, chopped (optional)
- Sour cream for serving
- 1 tablespoon oil (if needed)
Instructions
- Dice potatoes and onions, mince garlic, and measure spices.
- Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until browned (about 8 minutes). Drain excess grease and set beef aside.
- Reduce heat to medium. Add oil if the pan is dry. Add diced potatoes and onions. Season with salt and pepper. Cook for 10-15 minutes, stirring occasionally, until potatoes are tender and golden.
- Add minced garlic, smoked paprika, garlic powder, and thyme. Stir constantly for 1 minute until fragrant.
- Return cooked beef to the skillet. Pour in beef broth. Stir and simmer for 3-4 minutes until the broth reduces slightly.
- Remove skillet from heat. Sprinkle shredded cheese over the top. Cover with a lid or foil for 2 minutes to melt the cheese.
- Serve immediately topped with fresh parsley and a dollop of sour cream.
Notes
Ensure potatoes are cut into uniform ½-inch cubes for even cooking. Do not crowd the pan to allow potatoes to crisp up. Shred your own cheese for better melting. This recipe is naturally gluten-free. For a vegetarian version, substitute beef with lentils or tofu and use vegetable broth.
