Ground Beef Potato Skillet: Easy 1-Pan Dinner

  • Author: claire
  • Total Time: 30 minutes
  • Yield: 6 servings 1x

Description

A hearty, one-pan weeknight dinner featuring browned ground beef, crispy russet potatoes, and savory spices, finished with melted cheddar cheese.

Ingredients

Scale
  • 1.5 pounds ground beef (80/20 fat ratio)
  • 2 large russet potatoes (about 1.5 pounds), diced into ½-inch cubes
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • ½ cup beef broth (low-sodium)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped (optional)
  • Sour cream for serving
  • 1 tablespoon oil (if needed)

Instructions

  1. Dice potatoes and onions, mince garlic, and measure spices.
  2. Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until browned (about 8 minutes). Drain excess grease and set beef aside.
  3. Reduce heat to medium. Add oil if the pan is dry. Add diced potatoes and onions. Season with salt and pepper. Cook for 10-15 minutes, stirring occasionally, until potatoes are tender and golden.
  4. Add minced garlic, smoked paprika, garlic powder, and thyme. Stir constantly for 1 minute until fragrant.
  5. Return cooked beef to the skillet. Pour in beef broth. Stir and simmer for 3-4 minutes until the broth reduces slightly.
  6. Remove skillet from heat. Sprinkle shredded cheese over the top. Cover with a lid or foil for 2 minutes to melt the cheese.
  7. Serve immediately topped with fresh parsley and a dollop of sour cream.

Notes

Ensure potatoes are cut into uniform ½-inch cubes for even cooking. Do not crowd the pan to allow potatoes to crisp up. Shred your own cheese for better melting. This recipe is naturally gluten-free. For a vegetarian version, substitute beef with lentils or tofu and use vegetable broth.
