Description

A deconstructed, baked taco casserole that combines ground beef, beans, salsa, and cheese with flour tortillas for a zero-stress, kid-approved weeknight meal.

  • 1 packet taco seasoning (or 2 tablespoons homemade blend)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 810 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 cup medium salsa
  • ½ cup sour cream (divided)
  • 23 green onions, sliced (for garnish)
  • Cooking spray or butter for greasing dish

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it into small crumbles. Drain excess grease.
  3. Add diced onion to the skillet and cook for 2-3 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  4. Stir in taco seasoning, black beans, corn, and salsa. Simmer for 3-4 minutes to meld flavors and thicken the sauce.
  5. Tear half of the tortillas into large chunks. Spread half of the meat mixture on the bottom of the baking dish, sprinkle with half the cheese, and add the torn tortilla chunks.
  6. Repeat layers with remaining meat mixture, cheese, and tortilla chunks.
  7. Bake for 20-25 minutes until cheese is melted, bubbly, and slightly browned. Optionally broil for 2 minutes for extra browning.
  8. Remove from oven and let rest for 5 minutes before slicing to allow the casserole to set.
  9. Serve warm, topped with remaining sour cream and sliced green onions.

Notes

Do not skip the resting time; cutting immediately will cause the casserole to fall apart. Use flour tortillas as corn tortillas will become soggy. Ensure beans are thoroughly drained to prevent a watery casserole. This dish does not freeze well due to texture changes in tortillas and cheese.
