Healthy Baked Salmon with Broccoli: Best High Protein Dinner

  • Author: claire
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Description

A quick, one-pan high-protein dinner featuring flaky baked salmon and crispy roasted broccoli, seasoned with lemon, garlic, and herbs. Ready in just 25 minutes with minimal cleanup.

Ingredients

Scale
  • 1.5 pounds salmon fillets
  • 2 large heads broccoli, cut into bite-sized florets (about 800g)
  • 3 tablespoons extra virgin olive oil
  • 2 medium lemons (juice of both, zest of one)
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a large rimmed sheet pan with parchment paper.
  2. Wash and cut broccoli into uniform florets. Place on the prepared sheet pan, drizzle with half the olive oil, and season with salt and pepper. Toss to coat and spread in a single layer.
  3. Pat salmon fillets dry with paper towels. In a small bowl, whisk together remaining olive oil, lemon juice, lemon zest, minced garlic, oregano, and red pepper flakes.
  4. Brush the lemon-herb mixture generously over the salmon fillets. Season tops with salt and pepper.
  5. Place salmon fillets on the sheet pan among the broccoli. Ensure there is space between items to prevent steaming.
  6. Bake for 12-15 minutes, or until salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C). Broccoli should be tender-crisp with browned edges.
  7. Remove from oven and let salmon rest for 2-3 minutes before serving.
  8. Serve immediately with fresh lemon wedges.

Notes

Do not overcook the salmon; it continues to cook slightly after removal from the oven. For best results, use wild-caught Alaskan salmon and fresh broccoli. Uniform broccoli pieces ensure even cooking. Parchment paper is recommended for easy cleanup. This recipe is naturally gluten-free and dairy-free.
