- 1 tablespoon Italian seasoning
- 2 cloves garlic, minced
- 1 large egg
- 2 tablespoons freshly grated Parmesan cheese
- 2 tablespoons almond flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 medium yellow onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 6 cups chicken broth (low-sodium)
- 2 bay leaves
- 1 teaspoon dried thyme
- 3–4 cups fresh spinach
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
Instructions
- In a mixing bowl, combine ground turkey, Italian seasoning, minced garlic, egg, Parmesan cheese, almond flour, salt, and pepper. Mix gently with hands until just combined.
- Roll the mixture into 1-inch meatballs and set aside on a plate.
- Heat a large Dutch oven or stockpot over medium heat and add olive oil.
- Add diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes until onions are translucent and veggies soften.
- Add minced garlic and dried thyme to the pot. Stir constantly for 1 minute until fragrant, being careful not to brown the garlic.
- Pour in chicken broth and add bay leaves. Bring to a boil, then reduce heat to a gentle simmer for 5 minutes.
- Gently drop meatballs into the simmering broth. Cover and simmer for 10-12 minutes without stirring to ensure meatballs cook through (internal temp 165°F).
- Remove bay leaves. Stir in fresh spinach until wilted (about 30 seconds).
- Add lemon juice and taste for seasoning. Adjust salt or pepper if needed.
- Ladle into bowls and serve immediately, optionally topped with extra Parmesan and black pepper.
Notes
Do not overmix the meat to keep meatballs tender. Simmer gently to prevent meatballs from breaking apart. Add lemon juice at the end to brighten flavors. This soup freezes well for up to 3 months.
