  • 3 cloves garlic (minced)
  • 1 tablespoon fresh ginger (grated)
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 stalks green onions (sliced)
  • 1 teaspoon sesame seeds (toasted, optional)
  • Salt (for drawing out moisture)

Instructions

  1. Trim the ends off the zucchini and spiralize into noodles. Place in a colander, sprinkle with salt, and let sit for 5-10 minutes to draw out moisture. Rinse and pat very dry with paper towels.
  2. In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey (or maple syrup), and red pepper flakes. Set aside.
  3. Heat coconut oil in a large skillet or wok over medium-high heat. Add mushrooms and bell peppers; stir-fry for 2-3 minutes until mushrooms brown and peppers soften.
  4. Add minced garlic and grated ginger; cook for 30 seconds, stirring constantly, until fragrant.
  5. Add thawed edamame and pour the sauce over the vegetables. Stir to coat and simmer for 1 minute until the sauce bubbles and thickens slightly.
  6. Add the drained, dry zucchini noodles to the skillet. Toss gently with the vegetable mixture for 2-3 minutes until heated through and tender-crisp. Do not overcook.
  7. Remove from heat. Taste and adjust seasoning if needed. Garnish with sliced green onions and sesame seeds. Serve immediately.
