- 1 cup (225g) cottage cheese (full-fat or 2%, small-curd preferred)
- 2 large eggs
- ½ cup (60g) self-rising flour
- 1 teaspoon vanilla extract
- 2–3 tablespoons (30-45g) sweetener (maple syrup, honey, or sugar)
- Pinch of salt
- Optional: Butter or cooking spray for the pan
- Optional add-ins: Blueberries, chocolate chips, or cinnamon
Instructions
- Blend the cottage cheese and eggs in a blender on high for 30-45 seconds until completely smooth and creamy with no visible curds.
- Pour the smooth mixture into a bowl.
- Add the self-rising flour, vanilla extract, sweetener, and a pinch of salt to the bowl.
- Stir gently with a spatula or whisk until just combined. Do not overmix; a few lumps are fine.
- Heat a non-stick skillet or griddle over medium-low heat for 2-3 minutes.
- Lightly grease the pan with butter or cooking spray.
- Scoop about ¼ cup of batter onto the pan for each pancake.
- Cook for 2-3 minutes until bubbles form on the surface and the edges look set.
- Flip the pancake carefully and cook for another 1-2 minutes until golden brown on the other side.
- Remove to a plate and repeat with the remaining batter.
- Serve immediately with favorite toppings like maple syrup and fresh berries.
Notes
Blend the cottage cheese until completely smooth to avoid lumps. Use medium-low heat to prevent burning the outside before the inside cooks. Do not press down on the pancakes while cooking. For gluten-free, use GF self-rising flour or oat flour. For dairy-free, substitute cottage cheese with blended silken tofu.
