  • Pinch of salt

Instructions

  1. Blend the cottage cheese and eggs in a blender on high for 30-45 seconds until completely smooth and creamy with no visible curds.
  2. Pour the smooth mixture into a bowl.
  3. Add the self-rising flour, vanilla extract, sweetener, and a pinch of salt to the bowl.
  4. Stir gently with a spatula or whisk until just combined. Do not overmix; a few lumps are fine.
  5. Heat a non-stick skillet or griddle over medium-low heat for 2-3 minutes.
