Juicy, smoky, and perfectly charred high-protein turkey meatballs ready in just 20 minutes. This grill recipe uses Greek yogurt and panko to keep lean turkey moist and flavorful without the dryness.

- 1 lb (450g) ground turkey (93% or 99% lean)
- 1/2 cup (45g) panko breadcrumbs
- 1 large egg
- 2 tbsp (30g) plain, unsweetened Greek yogurt
- 2 cloves garlic, minced
- 1/4 cup (35g) finely diced yellow onion
- 2 tbsp (4g) fresh parsley, chopped
- 1 tsp (5g) kosher salt
- 1/2 tsp (1g) freshly cracked black pepper
- 1 tbsp (15ml) olive oil
Instructions
- Preheat the charcoal grill to high heat. Clean the grates thoroughly. If using wooden skewers, soak them in water for 10 minutes.
- In a small mixing bowl, combine ground turkey, panko breadcrumbs, egg, Greek yogurt, minced garlic, diced onion, parsley, salt, pepper, and olive oil.
- Mix gently with hands or a fork until just combined. Do not overmix to avoid tough meatballs.
- Wet your hands slightly and roll the mixture into 1.5-inch diameter balls. You should get about 12-14 meatballs.
- Thread meatballs onto metal skewers, leaving space between each, or arrange in a foil packet with holes poked in it.
- Place meatballs directly over hot coals. Close the lid to trap smoke and heat.
- Grill for 2-3 minutes on the first side until charred, then flip carefully.
- Grill for another 2-3 minutes on the other side until the internal temperature reaches 165°F (74°C).
- Remove from grill and let rest for 2 minutes before serving.
Notes
Keep the meatball mixture cold before grilling to help them hold their shape. Do not crowd the grill to ensure proper searing. For gluten-free, use gluten-free panko. Turkey must reach 165°F internal temperature.
