A grain-free, velvety pumpkin coffee syrup made with just five simple ingredients. This recipe captures the authentic, spiced flavor of fall without artificial additives or gums.

- 1 cup (240g) pure pumpkin puree
- 1/2 cup (100g) brown sugar
- 1 cup (240ml) water
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a small saucepan, combine water and brown sugar. Whisk over medium heat until the sugar is completely dissolved (1-2 minutes).
- Stir in pumpkin puree, pumpkin pie spice, and salt. Whisk vigorously until the mixture is smooth and orange.
- Reduce heat to medium-low and simmer gently for 10-12 minutes, stirring every 2-3 minutes to prevent sticking. The syrup will thicken as water evaporates.
- Remove from heat and stir in vanilla extract.
- Let the syrup cool completely in the pan (10-15 minutes) to allow it to thicken further.
- Pour into an airtight glass jar for storage. Shake well before use.
Notes
Do not use pumpkin pie filling; use 100% pure pumpkin puree. If the syrup is too thin, simmer longer. If too thick, add hot water. For extra smoothness, strain through a fine-mesh sieve after cooling. Store in the refrigerator for up to two weeks or freeze in ice cube trays for up to three months.
