  • 4 cups ice
  • ½ cup (120g) ketchup
  • 34 tablespoons prepared horseradish
  • 1 teaspoon Worcestershire sauce
  • 12 teaspoons hot sauce (e.g., Tabasco or Frank’s RedHot)
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon paprika (optional, for garnish)

Instructions

  1. Prepare an ice bath by filling a large bowl with ice and cold water.
  2. In a small bowl, whisk together ketchup, horseradish, Worcestershire sauce, hot sauce, and fresh lemon juice. Taste and adjust seasoning if desired. Cover and refrigerate until ready to serve.
  3. Fill a large stockpot with 6-8 cups of water. Add sea salt, peppercorns, bay leaf, and lemon slices. Bring to a rolling boil.
