A quick, high-protein, low-carb lunch featuring savory ground turkey wrapped in crisp butter lettuce leaves with Asian-inspired flavors.

- 1 pound (450g) 93% lean ground turkey
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon toasted sesame oil
- 2 tablespoons hoisin sauce
- 4 stalks green onions, sliced
- 1 large head butter lettuce, leaves separated
- 1 tablespoon avocado oil or coconut oil
- Optional: shredded carrots, cucumber slices, fresh cilantro, water chestnuts
Instructions
- Prep ingredients: Dice onion, mince garlic, grate ginger, and slice green onions. Wash and thoroughly pat dry butter lettuce leaves.
- Heat oil in a large skillet or wok over medium-high heat. Add ground turkey, breaking it up with a spoon, and cook for 5-6 minutes until browned.
- Push turkey to the side and add diced onion to the pan. Cook for 2 minutes until softened.
- Add garlic and ginger to the pan. Stir and cook for 1 minute until fragrant, being careful not to burn the garlic.
- Pour in soy sauce, sesame oil, and hoisin sauce. Stir to coat the turkey and simmer for 2 minutes until the sauce thickens slightly.
- Remove from heat and stir in half of the sliced green onions. Taste and adjust seasoning if needed.
- Spoon the warm turkey mixture into the butter lettuce leaves. Top with remaining green onions and optional toppings. Serve immediately.
Notes
Pat lettuce leaves completely dry to prevent soggy wraps. Do not overcrowd the pan when cooking turkey to ensure proper browning. The filling can be made up to 3 days in advance and stored in the refrigerator. Use tamari instead of soy sauce for a gluten-free version.
