A streamlined, grab-and-go meatloaf recipe designed for meal prep. It features a moist interior thanks to a milk-soaked breadcrumb panade and a sticky, savory sweet glaze that locks in moisture, making it perfect for reheating throughout the week.

- 2 lbs ground beef (80/20 blend)
- 1 cup plain dried breadcrumbs (or panko)
- 1/2 cup whole milk
- 2 large eggs
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp apple cider vinegar
- 3 cloves garlic, minced
- 1/2 cup onion, diced
- 1 tbsp Worcestershire sauce
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine breadcrumbs and milk. Stir and let sit for 5 minutes to form a thick paste (panade).
- Add ground beef, eggs, minced garlic, diced onion, Worcestershire sauce, salt, and pepper to the panade.
- Mix ingredients by hand just until combined. Do not overwork the meat.
- Transfer mixture to a greased 9×5 inch loaf pan. Press down firmly and smooth the top.
- Bake for 45 minutes.
- While baking, combine ketchup, brown sugar, and apple cider vinegar in a small saucepan. Heat over medium heat for 2-3 minutes until sugar dissolves and mixture is bubbly.
- Remove loaf from oven. Tent loosely with aluminum foil. Return to oven for 15-20 minutes.
- Remove loaf from oven. Brush half of the glaze over the top. Return to oven for 5 minutes to set.
- Check internal temperature with an instant-read thermometer; it should read 160°F (71°C). If lower, bake for 5 more minutes.
- Brush remaining glaze over the loaf.
- Let the meatloaf rest for 15 minutes before slicing to allow juices to redistribute.
- Slice into 8 even pieces for serving or meal prep.
Notes
Use 80/20 ground beef for moisture; leaner beef may result in a dry loaf. Do not skip the resting period, as cutting too early causes moisture loss. The loaf can be assembled and refrigerated for up to 24 hours before baking. Freeze individual slices for up to 3 months.
