Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons extra virgin olive oil
  • 45 cloves garlic, minced
  • 1 tablespoon butter
  • 1/2 cup dry white wine (or chicken/vegetable broth)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 2 cups fresh spinach
  • 1 large lemon (zest and juice)
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Optional: 1/4 cup Kalamata olives, sliced
  • Optional: 1/2 medium red onion, diced

Instructions

  1. Defrost frozen shrimp in cold water if necessary, then drain and pat dry thoroughly with paper towels. Season lightly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes, cooking for 30-60 seconds until fragrant but not brown.
  3. Add shrimp to the pan in a single layer. Cook for 1-2 minutes per side until pink and opaque. Remove shrimp from the pan and set aside.
  4. Lower heat to medium. Pour in white wine (or broth) and scrape up brown bits from the bottom of the pan. Simmer for 2 minutes to reduce slightly.
  5. Add cherry tomatoes and dried oregano to the pan. Cook for 1 minute until tomatoes begin to soften.
  6. Stir in crumbled feta cheese until melted into a creamy sauce. Add lemon zest and half the lemon juice. Taste and adjust seasoning.
  7. Return shrimp to the pan along with any juices. Add spinach and stir until wilted (about 30 seconds).
  8. Turn off heat. Stir in butter (if using) and remaining lemon juice. Serve immediately over couscous, quinoa, or with crusty bread.
