Description
A meal-prep friendly apple strudel made with store-bought phyllo dough and spiced apple filling. Designed to be baked, frozen, and reheated quickly for grab-and-go holiday desserts.

- 600g (1.3 lbs) Apples (mix of Granny Smith and Honeycrisp), peeled and sliced into thin wedges
- 1 package (approx. 450g / 1 lb) Phyllo Dough, thawed
- 115g (½ cup) Unsalted Butter, melted
- 120g (½ cup) Dark Brown Sugar, packed
- 5g (1 tsp) Ground Cinnamon
- 2g (½ tsp) Ground Cardamom
- 5ml (1 tsp) Pure Vanilla Extract
- 30g (¼ cup) Confectioners’ Sugar, for dusting (optional)
Instructions
- Preheat oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- In a large bowl, toss sliced apples with brown sugar, cinnamon, cardamom, and vanilla. Let sit for 10 minutes to draw out moisture, then drain most of the liquid, leaving about 1 teaspoon.
- Unroll phyllo dough and keep covered with a damp towel. Lay out two sheets, overlapping slightly, and brush with melted butter. Repeat with two more sheets to form a 12×10 inch rectangle.
- Spoon the apple mixture down the center of the dough, leaving a 2-inch border. Fold the sides over the filling and roll tightly from the bottom up. Place seam-side down on the baking sheet and brush the top with more butter.
- Repeat with remaining dough and filling to make a second strudel.
- Bake for 20-25 minutes until deep golden brown and crispy. Tent with foil if browning too quickly.
- Let strudels cool completely on the pan to prevent condensation.
- Once cool, cut each strudel into four equal rectangles. Wrap tightly in plastic wrap and place in heavy-duty freezer bags. Label with date.
Notes
Ensure phyllo dough is kept covered with a damp towel while working to prevent drying out. Do not thaw strudels before reheating; bake straight from frozen to maintain crispness. For best freezing results, flash freeze on the baking sheet for one hour before wrapping.
