  • 23 soft burger buns or pretzel rolls (approx. 46 oz / 115-170g)

Instructions

  1. Slice the onion into thin half-moons (about 1/4-inch thick) and place in a bowl.
  2. Heat a 10-inch skillet over medium heat. Add butter and olive oil. Once butter stops foaming, add onions.
  3. Sprinkle baking soda over onions and toss gently to coat. Cook for about 10 minutes, stirring every 2-3 minutes, until deep golden brown. Deglaze with a splash of water or beer if sticking. Add sugar if needed and cook 2-3 more minutes.
  4. Push onions to the side or remove to a plate. Add bratwursts to the center of the pan and pour beer over them.
  5. Simmer sausages in beer for 3-4 minutes, flipping once halfway through, until plump but not browned.
  6. Increase heat to medium-high. Sear sausages for 4-5 minutes, turning frequently, until browned on all sides and internal temperature reaches 160°F (71°C).
  7. Return caramelized onions to the pan with sausages. Toss gently to combine and heat through.
  8. Toast buns cut-side down in a separate pan or under the broiler until lightly golden.
  9. Slice sausages diagonally or keep whole. Place sausage on bun, pile on onion-beer mixture, and serve immediately.
