  • 1.5 lbs boneless, skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 45 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
  • 34 cups fresh baby spinach
  • 1/2 cup freshly grated parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Pat chicken breasts dry and season both sides generously with salt, pepper, garlic powder, onion powder, and Italian seasoning. Pound to an even 1/2-inch thickness if necessary.
  2. Heat a large skillet over medium-high heat. Add butter and let it melt. Sear chicken for 4-5 minutes per side until golden brown. Remove chicken to a plate and set aside.
  3. Reduce heat to medium. Add minced garlic and red pepper flakes to the skillet; sauté for 30-60 seconds until fragrant.
  4. Pour in chicken broth and scrape the bottom of the pan to release browned bits. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and sun-dried tomatoes. Simmer gently for 2 more minutes until the sauce begins to thicken.
  6. Add fresh spinach and stir until wilted (about 30-60 seconds). Stir in parmesan cheese until melted and smooth.
  7. Return chicken and any juices to the skillet. Nestle chicken into the sauce, cover, and simmer on low for 5-7 minutes until chicken reaches an internal temperature of 165°F.
  8. Serve immediately with crusty bread, pasta, rice, or cauliflower mash.

Notes

Pound chicken to even thickness for uniform cooking. Do not skip searing the chicken for flavor. Use freshly grated parmesan to prevent a grainy sauce. If the sauce is too thick, add a splash of broth or milk. This recipe does not freeze well due to the dairy content.
