Description
A quick and easy 15-minute dinner featuring tender sirloin steak bites seared in a skillet with a rich garlic butter sauce. This one-pan meal is perfect for busy weeknights and requires minimal cleanup.

- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 6–8 cloves garlic, minced
- 1/2 cup low-sodium beef broth
- 1 teaspoon freshly cracked black pepper
- 1/2 teaspoon salt (or to taste)
- 1 teaspoon dried thyme or rosemary (optional)
- 1 tablespoon olive oil or vegetable oil (for searing)
- 1 cup frozen peas (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Pat the steak cubes completely dry with paper towels and season generously with salt, pepper, and optional herbs.
- Place a large skillet or cast iron pan over medium-high heat for 2-3 minutes until hot. Add 1 tablespoon of oil and swirl to coat.
- Add steak cubes to the pan in a single layer (cook in batches if necessary to avoid overcrowding). Sear for 1-2 minutes per side until browned but still pink inside. Remove steak to a plate and set aside.
- Reduce heat to medium. Add 4 tablespoons of butter to the same pan. Once melted and foaming, add minced garlic and stir constantly for 30-60 seconds until fragrant but not browned.
- Pour in beef broth and use a wooden spoon to scrape up brown bits from the bottom of the pan. Simmer for 1-2 minutes until the sauce thickens slightly.
- Return the steak and any accumulated juices to the pan. Toss to coat in the sauce. If using frozen peas, add them now and cook for 1-2 minutes until thawed and steak is cooked through.
- Taste and adjust seasoning with salt and pepper. Transfer to a serving dish, garnish with fresh parsley, and serve immediately.
Notes
Ensure the steak is completely dry before searing to prevent steaming. Do not overcrowd the pan; cook in batches if necessary to ensure a good sear. Garlic burns quickly, so keep it moving and add broth immediately if it starts to brown. For best results, serve immediately as leftovers can become tough.
