  • 4 tablespoons unsalted butter
  • 68 cloves garlic, minced
  • 1/2 cup low-sodium beef broth
  • 1 teaspoon freshly cracked black pepper
  • 1/2 teaspoon salt (or to taste)
  • 1 teaspoon dried thyme or rosemary (optional)
  • 1 tablespoon olive oil or vegetable oil (for searing)
  • 1 cup frozen peas (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Pat the steak cubes completely dry with paper towels and season generously with salt, pepper, and optional herbs.
  2. Place a large skillet or cast iron pan over medium-high heat for 2-3 minutes until hot. Add 1 tablespoon of oil and swirl to coat.
  3. Add steak cubes to the pan in a single layer (cook in batches if necessary to avoid overcrowding). Sear for 1-2 minutes per side until browned but still pink inside. Remove steak to a plate and set aside.
  4. Reduce heat to medium. Add 4 tablespoons of butter to the same pan. Once melted and foaming, add minced garlic and stir constantly for 30-60 seconds until fragrant but not browned.
  5. Pour in beef broth and use a wooden spoon to scrape up brown bits from the bottom of the pan. Simmer for 1-2 minutes until the sauce thickens slightly.
  6. Return the steak and any accumulated juices to the pan. Toss to coat in the sauce. If using frozen peas, add them now and cook for 1-2 minutes until thawed and steak is cooked through.
  7. Taste and adjust seasoning with salt and pepper. Transfer to a serving dish, garnish with fresh parsley, and serve immediately.

Notes

Ensure the steak is completely dry before searing to prevent steaming. Do not overcrowd the pan; cook in batches if necessary to ensure a good sear. Garlic burns quickly, so keep it moving and add broth immediately if it starts to brown. For best results, serve immediately as leftovers can become tough.
