  • 8 oz wide egg noodles
  • 8 oz cremini mushrooms
  • 1 medium yellow onion, diced
  • 1 ½ cups low-sodium beef broth
  • ½ cup full-fat sour cream
  • 1 tbsp Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 tsp Dijon mustard
  • 2 tbsp butter
  • 2 tbsp flour
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Melt butter in a large Dutch oven or heavy-bottomed pot over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  2. Add mushrooms and cook for another 3-4 minutes until browned and tender.
  3. Add the beef (ground or sliced) to the pot. If using ground beef, break it up with a wooden spoon. Cook until browned, about 5-6 minutes. Drain excess fat if necessary.
  4. Stir in minced garlic, Dijon mustard, and Worcestershire sauce. Cook for 1 minute until fragrant.
  5. Sprinkle flour over the beef mixture and stir constantly for 1 minute to cook off the raw flour taste.
  6. Pour in beef broth and add egg noodles. Stir well to combine.
  7. Bring to a boil, then reduce heat to low. Cover and simmer for 12-15 minutes, stirring occasionally, until noodles are tender and sauce has thickened.
  8. Remove the pot from heat. Stir in sour cream until fully combined. The sauce will become thick and velvety.
  9. Taste and add salt and pepper as needed. Serve hot, topped with fresh parsley if desired.

Notes

Do not overcook the noodles as they can turn mushy. Temper the sour cream by removing the pot from heat before adding it to prevent curdling. Use low-sodium broth to control saltiness. This recipe does not freeze well due to the sour cream.
