  • 1 cup pure pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 8 oz full-fat block cream cheese, softened
  • ½ cup unsalted butter, softened
  • 3 cups powdered sugar
  • ¼ teaspoon salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and line bottoms with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and pumpkin pie spice.
  3. In a large bowl, whisk eggs, sugar, vegetable oil, melted butter, and vanilla extract until smooth. Stir in pumpkin puree.
  4. Gradually add dry ingredients to wet ingredients, mixing on low speed or folding with a spatula until just combined.
  5. Pour batter evenly into prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  7. In a large bowl, beat softened cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt. Beat on low until combined, then high for 2-3 minutes until fluffy.
  8. Place one cake layer on a serving plate, spread frosting on top, add second layer, and frost top and sides.

Notes

Ensure ingredients are at room temperature for best results. Do not use pumpkin pie filling; use plain puree. Store in the fridge due to cream cheese frosting. Can be made ahead by baking layers a day in advance.
