Ingredients

- 2 medium zucchini, sliced into half-moons or cubes
- 1 large red onion, chopped into wedges
- 1 head broccoli, cut into bite-sized florets
- 1 cup cherry tomatoes, left whole
- 3 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried Italian seasoning

Instructions
- Preheat oven to 400°F (200°C) and center the oven rack.
- Chop bell peppers and zucchini into 1-inch chunks, slice red onion into wedges, and cut broccoli into florets. Keep pieces uniform for even cooking.
- Slice the sausage into coin-shaped pieces, about ¼ inch thick.
- In a large bowl, combine the chopped vegetables, sausage, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss until everything is evenly coated.
- Line a large sheet pan (18×13 inch) with parchment paper (optional). Spread the mixture in a single layer, ensuring pieces are not crowded to allow for roasting rather than steaming.
- Roast in the preheated oven for 20 minutes, flipping the vegetables and sausage halfway through to ensure even browning.
- Check for doneness: vegetables should be tender and slightly charred, and sausage should be crispy on the edges.
- Serve immediately, optionally garnished with fresh parsley or grated Parmesan cheese.
Notes
Do not crowd the pan; use two pans if necessary to ensure veggies roast instead of steam. Cut vegetables into uniform sizes for even cooking. For extra crispiness, broil for 1-2 minutes at the end. This dish does not freeze well as vegetables become mushy upon thawing. Store leftovers in an airtight container in the fridge for up to 4 days.
