Sheet Pan Sausage and Veggies: 30-Minute Healthy Dinner

  • Author: claire
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Description

A quick, healthy, and easy weeknight dinner featuring smoked sausage and roasted vegetables on a single sheet pan. Minimal cleanup and maximum flavor make this the ultimate ‘I don’t want to think’ meal.

Ingredients

Scale
  • 1 pound smoked sausage (chicken, turkey, andouille, or Italian), sliced into coins
  • 2 medium bell peppers (any color), chopped into 1-inch chunks
  • 2 medium zucchini, sliced into half-moons or cubes
  • 1 large red onion, chopped into wedges
  • 1 head broccoli, cut into bite-sized florets
  • 1 cup cherry tomatoes, left whole
  • 3 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and center the oven rack.
  2. Chop bell peppers and zucchini into 1-inch chunks, slice red onion into wedges, and cut broccoli into florets. Keep pieces uniform for even cooking.
  3. Slice the sausage into coin-shaped pieces, about ¼ inch thick.
  4. In a large bowl, combine the chopped vegetables, sausage, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss until everything is evenly coated.
  5. Line a large sheet pan (18×13 inch) with parchment paper (optional). Spread the mixture in a single layer, ensuring pieces are not crowded to allow for roasting rather than steaming.
  6. Roast in the preheated oven for 20 minutes, flipping the vegetables and sausage halfway through to ensure even browning.
  7. Check for doneness: vegetables should be tender and slightly charred, and sausage should be crispy on the edges.
  8. Serve immediately, optionally garnished with fresh parsley or grated Parmesan cheese.

Notes

Do not crowd the pan; use two pans if necessary to ensure veggies roast instead of steam. Cut vegetables into uniform sizes for even cooking. For extra crispiness, broil for 1-2 minutes at the end. This dish does not freeze well as vegetables become mushy upon thawing. Store leftovers in an airtight container in the fridge for up to 4 days.
