  • 1 can (15 oz / 425g) black beans, drained and rinsed
  • 1 cup (240ml) enchilada sauce (mild or hot)
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • 810 small flour tortillas (6-inch / 15cm)
  • 1 cup (100g) shredded cheese (Mexican blend or Cheddar)
  • 1 cup (240ml) salsa
  • 2 medium avocados, sliced or diced
  • ½ cup (120g) sour cream
  • ¼ cup fresh cilantro, chopped
  • 2 limes, cut into wedges

Instructions

  1. Remove meat from rotisserie chickens and shred into bite-sized pieces using two forks. Discard skin, bones, and cartilage.
  2. Drain and rinse black beans. Heat beans in a small saucepan or microwave until warm. Optionally mash slightly and add a pinch of cumin and lime juice.
  3. In a large skillet, heat enchilada sauce over medium heat. Add shredded chicken, cumin, and garlic powder. Stir to combine and simmer for 2-3 minutes until chicken is hot and coated. Add a splash of water if dry.
  4. Warm tortillas in a dry skillet for 30 seconds per side or in the microwave with a damp paper towel for 30 seconds until soft and pliable.
  5. Assemble tacos by placing warm tortillas on plates. Top with chicken mixture, beans, cheese, salsa, sour cream, avocado, and cilantro.
  6. Serve immediately with lime wedges on the side.

Notes

For best results, warm tortillas thoroughly to prevent cracking. Simmering the chicken in the sauce adds crucial flavor and moisture. The chicken mixture can be made up to 3 days ahead and refrigerated. Tortillas should be warmed fresh. For a vegetarian option, skip the chicken and use extra beans or sautéed vegetables. For gluten-free, use corn tortillas. For dairy-free, omit cheese and sour cream, using avocado for creaminess.
