Description

A creamy, comforting, and easy dump-and-go dinner that uses rotisserie chicken or raw thighs, uncooked rice, and canned soup for a hassle-free weeknight meal with a crunchy topping.

  • 3 cups diced or shredded chicken (boneless skinless thighs or rotisserie)
  • 1 cup uncooked long-grain white rice
  • 1 cup low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste
  • 1 cup frozen peas and carrots
  • ½ cup shredded sharp cheddar cheese
  • ½ cup cornflakes or crushed crackers
  • 2 tablespoons butter (for topping)

Instructions

  1. Prep the chicken: Dice raw thighs into 1-inch cubes or shred rotisserie chicken.
  2. In a large bowl, combine chicken, uncooked rice, diced onion, minced garlic, cream of mushroom soup, chicken broth, dried parsley, salt, and pepper. Stir until evenly coated.
  3. Transfer the mixture to a 6-quart slow cooker. Spread evenly and top with frozen peas and carrots.
  4. Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours, until rice is tender and chicken is cooked through (165°F if using raw chicken).
  5. While cooking, melt butter in the microwave. Mix with cornflakes or crushed crackers until coated.
  6. Once rice is cooked, stir the casserole. Sprinkle cheddar cheese and the buttered topping over the surface.
  7. Cover and let sit for 5-10 minutes on HIGH to melt the cheese and warm the topping.
  8. Serve immediately.

Notes

Do not rinse the rice to allow starch to thicken the sauce. Stir before serving to prevent burning at the bottom. If rice is undercooked, add more liquid and cook longer. If too soupy, leave lid off for last 30 minutes. Chicken thighs stay juicier than breast meat. Leftovers keep in fridge for 4 days; do not freeze as rice texture suffers.
