  • 1 to 1.5 pounds pork tenderloin
  • 1 packet (1 oz / 28g) French onion soup mix
  • ½ cup (120g) grape jelly
  • 2 tablespoons (30ml) soy sauce
  • 1 teaspoon (5g) minced fresh ginger or ½ teaspoon ground ginger
  • ¼ cup (60ml) water or chicken broth

Instructions

  1. Trim the silver skin (tough membrane) from the pork tenderloin and pat dry.
  2. In a small bowl, whisk together the grape jelly, soy sauce, ginger, and water or broth.
  3. Place the pork tenderloin in the bottom of a 6-quart slow cooker.
  4. Sprinkle the French onion soup mix evenly over the pork.
  5. Pour the sauce mixture over the pork, ensuring it is mostly coated.
  6. Cover and cook on LOW for 4-5 hours, until the pork reaches an internal temperature of 145°F (63°C) and is fork-tender.
  7. Remove the pork from the slow cooker and let it rest for 5 minutes.
  8. Shred the pork using two forks.
  9. Pour the cooking liquid from the slow cooker into a small saucepan and bring to a boil.
  10. Simmer the sauce for 5-7 minutes until it reduces and thickens into a glaze.
  11. Stir the shredded pork back into the thickened sauce.
  12. Serve immediately over rice, in sandwiches, or with mashed potatoes.

Notes

Trim the silver skin from the pork to prevent chewy bits. Do not skip the sauce reduction step to achieve a glossy glaze. If using frozen pork, add 1-2 hours to cooking time and ensure it is fully thawed before shredding. For a gluten-free version, use tamari instead of soy sauce and a gluten-free onion soup mix.
