Description

A rich, creamy outdoor-cooked tomato soup infused with hickory smoke and finished with luxurious, slow-cooked garlic confit oil.


Ingredients

  • 2 lbs (900g) heirloom or Roma tomatoes, halved
  • 1 large yellow onion, diced
  • 1 head garlic (1012 cloves) for confit
  • 23 extra garlic cloves, minced
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 cups (480ml) low-sodium chicken or vegetable stock
  • 1/2 cup (120ml) heavy cream or full-fat coconut milk
  • 1 tsp smoked paprika
  • 2 bay leaves
  • Salt and black pepper to taste

Instructions

  1. Make the garlic confit: Peel garlic cloves and place them in a small saucepan. Cover with olive oil and heat over medium-low heat until gently simmering. Cook for 30-45 minutes until golden and soft. Remove from heat and let cool in the oil.
  2. Preheat the smoker or grill to 350°F (175°C) using hickory or applewood.
  3. Smoke the tomatoes: Place tomato halves cut-side up on the smoker grate. Smoke for 45-60 minutes until wrinkled and charred slightly.
  4. Sauté aromatics: In a cast-iron skillet, heat 2 tablespoons of olive oil over medium heat. Cook diced onions for 5 minutes until translucent. Add minced garlic and smoked paprika, cooking for 1 minute until fragrant.
  5. Combine and simmer: Add the smoked tomatoes and their juices to the skillet. Pour in the stock and add bay leaves. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
  6. Blend and finish: Remove bay leaves and puree the soup with an immersion blender until smooth. Stir in heavy cream or coconut milk. Season with salt and pepper to taste.
  7. Serve: Ladle soup into bowls, swirl with garlic confit oil, and top with a confit garlic clove.

Notes

Garlic confit can be made ahead and stored in the fridge for up to 2 weeks. The soup tastes better the next day as flavors meld. If using canned tomatoes, skip the smoking step for the tomatoes but still make the confit. For a vegan version, use vegetable stock and coconut milk.
