Description
These smoky deviled eggs are a flavor-packed, easy-to-make appetizer perfect for Labor Day or any summer gathering. Featuring chipotle peppers, pickle juice, and smoked paprika, they offer a creamy, spicy, and savory twist on a classic.
Ingredients
- 12 large eggs
- 1/2 cup mayonnaise (Hellmann’s or Duke’s recommended)
- 1–2 tablespoons pickle juice (from dill pickles)
- 1–2 small chipotle peppers in adobo sauce, finely minced
- 1 teaspoon adobo sauce (from the can)
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt (or to taste)
- Black pepper (to taste)
- Fresh chives, chopped (for garnish)
Instructions
- Fill a large pot with enough water to cover the eggs by an inch and bring to a rolling boil.
- Carefully lower the eggs into the water using a slotted spoon, then reduce heat to a simmer.
- Cook the eggs for 12-15 minutes (13 minutes is ideal for a perfectly set yolk).
- While eggs cook, prepare an ice bath in a large bowl with cold water and ice.
- Transfer the cooked eggs to the ice bath immediately and let them sit for at least 10 minutes to cool completely.
- Tap each egg gently to crack the shell, then peel under running water.
- Slice each egg in half lengthwise and scoop out the yolks into a small mixing bowl.
- Add mayonnaise, pickle juice, minced chipotle peppers, adobo sauce, garlic powder, Dijon mustard, salt, and pepper to the yolks.
- Mix until smooth using a hand mixer or fork.
- Transfer the filling to a piping bag or a Ziploc bag with the corner cut off.
- Pipe the filling into the egg white halves, creating small peaks.
- Garnish with smoked paprika and chopped chives.
- Serve immediately or refrigerate for up to 2 hours before serving.
